My identity is a Korean American has always been a difficult one for me since I was a young child and I really relished the opportunity to explore some of the really complicated feelings that go into identity, family, and heritage.
And on top of that, the book is a bit of a love letter to Omaha, Nebraska, too!

I didn’t actually eat this very much growing up and learned to love it only in the last 10 years. There are shortcuts in the frozen section of the Asian grocery store, so you can always give those a try if you want to taste it without a big cooking investment. But you should definitely give it a try!

The mini hotdogs are optional (and actually you can make this the plain style without the tomato, cream, or cheese— but this way is so scrumptious so we do it this way all the time)

1 lb ttoekk (frozen Korean rice cakes, soaked in water for 15 min)
3 Tbs gochujang (Korean spicy pepper paste)
1/2 Tbs gochugaru (Korean red pepper flakes)
1 Tbs sugar
1/2 tsp salt
1/2 Tbs Dasida soup stock
3 cups water
4-6 oz sliced fish cake
1/4 chopped cabbage
6 oz mini hot dogs (optional or can sub edamame)
1/2 cup tomato puree
1/4 cup cream cheese
1 cup shredded mozzarella
Toasted sesame seeds for garnish
Chopped scallions for garnish

Directions: soak the ttoek or rice cakes in cold water for 15 minutes. Meanwhile, simmer 3 cups of water in a large pot. Add the soup stock powder (or if you prefer to make it from scratch, instead, you can make a stock with dried kelp and dried anchovies with a head and guts removed simmered from 4 cups of water down to three, then remove the kelp and fish)

Mix together the red pepper paste, pepper flakes, sugar, and salt. Add to the simmering water. Stir to combine. Add in the rice cakes, cabbage, hotdogs (or edamame if you want protein added that’s vegetarian), and fish cakes. Simmer 15 to 20 minutes, making sure that the rice cakes stay under the surface of the liquid while cooking. You can add half a cup of water extra if the sauce gets too thick. The ttoek should be chewy and tender when it’s done and the cabbage is cooked through. Then add the tomato purée, cream, and cheese, and stir to combine. Garnish with sesame seeds and chopped scallions.

It was a pretty good year for pumpkins in the back yard! This year, I mostly did Koginut squash, Italian white zucchini, some pepita pumpkins , but failed at cucumbers again because they seem to hate me. We got a few Delicata squash by accident. Must be leftover seeds from last year. The giant overgrown zucchini will be donated to our local wildlife refuge to feed their animals. In any case, we’ve already made lots of pumpkin soup and we have more recipes coming!
